time + process

I am biased towards processes that take time. Something about working on something, putting it away, waiting and then working on it again, makes the process feel so much more rewarding. You have a fresh ear on the sound, or mind on the words, or whatever you need.

Like the process of making sourdough. You pull the starter out of the fridge and feed it. Let it work overnight. Then in the next morning you make the dough. And then let it do it’s work. Check back in hour. Let it work. Put it in the fridge overnight, letting it work. Then, finally, on the third day– put it in the oven. Even after pulling the fresh loaf out of the oven, you must wait again for it to cool, otherwise you’ll get dry bread.

What does this time-consuming process yield?

A more flavorful bread.
